Cheesy Skillet Cornbread

• 2 lbs Riverview Farms Cornmeal

• 8 oz Maid-N-Meadows Pepperjack

• 1 quart JD Country Milk Buttermilk

• 1 Dozen Sequatchie Cove Eggs


1 cup cornmeal

1 cup all-purpose flour

4 teaspoons baking powder

2 tablespoons granulated sugar

Pinch salt

1 cup buttermilk (preferred) or milk

1/2 cup olive oil or vegetable oil

2 farm eggs

1/2 cup grated cheese of choice, we suggest Pepper Jack 


Step 1: Preheat oven to 450 degrees. Place your cast iron skillet in the oven as it's preheating to create a lovely crust!

Step 2: In a medium bowl, stir together cornmeal, flour, baking powder, sugar and salt. Stir in milk, oil and eggs. Stir in grated cheese.

Step 3: Pour into heated skillet and bake 20 minutes or until cooked through. Serve immediately.
