Water Kefir is a fizzy fermented soft drink flavored with fruit, herbs, juice or roots. Refreshing and low in sugar, it is a healthy, probiotic alternative to soda and a great way to introduce fermented flavors to kids.
Like kombucha, water kefir is made using a specific type of symbiotic culture of bacteria and yeast(SCOBY), or “water kefir grains”. The SCOBY converts sugar to lactic acid and carbon dioxide, creating a naturally carbonated drink. While kombucha has a tart, acidic flavor, water kefir is sweet and slightly malty.
