Aleppo Chiles have a medium heat, slow build, and fruity flavor. Named for the Aleppo region of northern Syria where the chiles originated, they are used in a number of Middle Eastern dishes, such as hummus, baba ganoush, kebabs, and braised vegetables. Aleppo combines well with oregano, paprika, cumin, and garlic. Switch out your standby crushed red pepper for these chiles for a deeper, complex flavor.
